Daddy's Hot IPA

(5 gallons, partial mash)


Ingredients:


o 1 lb. toasted Briess Pale Ale malt (toast in oven for 30 minutes at 350°F)
o 2 lb. Briess Crystal 10L
o 7 lbs. Briess Sparkling Amber malt extract
o 1 oz. Willamette hops (60 min) 5.1%
o 1 oz. Kent Goldings hops (30 min) 5.3%
o 1 oz. Cascade Hops (Dry) 5.6%
o 5 large Scotch Bonnets
o English ale yeast slurry (Wyeast 1098 or equivalent)
o 3/4 Cup Corn Sugar for priming
o Whole chilis for bottling

Step by Step

Heat 1 gallon water to 164°F. Crush grains, mix into liquor and hold at 152°F for 30 minutes. Runoff and sparge with 1 1/2 gallons water at 169°F.

Total boil is 60 minutes.
Add Willamette hops.
Add Kent Goldings hops(30 min).
Turn off heat, add 5 large Scotch Bonnets, chopped into small pieces. Steep 30 minutes.

Strain, chill wort.
pitch yeast at around 70° F.

Dry hop with 1 oz. Cascade Hops in fermenter. Ferment relatively warm (68-70°F) for two weeks.

Rack to secondary and condition cool (55-60°F) for three to four weeks. Prime with 3/4 Cup Corn Sugar, add Whole chilis to each bottle. Seal and condition for six weeks.

OG = 1.063
FG = 1.014
Color = 13.68 °SRM
Bitterness = 40.6 IBU
